Harira Soup
Harira est une soupe traditionnelle marocaine, c’est une recette délicieuse que les Marocains consomment généralement le soir ou bien le petit déjeuner, il est servi dans les restaurants et servi bien chaude.
How to make harira soup?
To make a soup you need :
– 300 g lamb shoulder, diced
– 2 marrow bones
– 3 lemons cut in half for serving
– 1 celery heart and 2 stalks, chopped
– 3 medium onions, chopped, 6 tablespoons fresh coriander, finely chopped
– 10 cl sunflower oil, 6 tablespoons finely chopped parsley
– 100 g lentils, juice of 2 lemons
– 100g chickpeas soaked the day before
– tsp. baking soda
– 1 teaspoon of salt, 1 dose of safran which gives it a special taste
– tsp ground white pepper
– 3 litres of water, 3 tsp of flour
– 1 teaspoon tomato paste
– 1 kg fresh tomatoes, peeled, seeded and diced
– 100 g fine vermicelli, 100 g round rice
What to serve the Harira soup with ?
You can prepare briwates with chicken, mssemen facris with chicken or tuna, or simply a good semolina bread.
